Managing FOG; Fats, Oils and Grease. Proper disposal keeps FOG out of sewers and septic systems and avoids plumbing emergencies. These workshops are designed to present information to community leaders with responsibility for sewer systems (such as a System Operator, City Manager/Administrator, Council/Authority Member), owners and workers at food service establishments (restaurants, nursing homes, cafeterias, hospitals, and convenience stores), and residents (homeowners and renters). This information will help to: • Understand the need to control FOG • Understand how grease traps and interceptors function• Be able to implement a FOG management program for both a large and small service area
